Tacos Don Luis works off a single large pot of birria, the slow-cooked, chili-rich stew that's a Jalisco specialty, and builds the whole menu around it — tacos dipped and griddled until the tortilla soaks up the broth, served with a cup of consommé for spooning or drinking straight. It's fast, informal, and priced like a street stand even though the birria is done properly.
The crowd is mostly local, tapatíos who treat this as a regular stop rather than a destination meal, and the line moves quickly even when it's long. It's not a sit-down restaurant experience — expect to eat standing or at simple counter seating.
