Trinidad

A sugar-boom colonial town of cobbles and pastel houses, where the local drink comes in a clay pot.

Trinidad grew rich on the sugar of the valley behind it and then stopped, which is why its colonial centre survived nearly intact. The cobbled streets around Plaza Mayor fill with day-trippers by late morning and empty again by evening — stay the night.
