Custard Nakamura has been baking in the same Sukhumvit alley since 1970, and the menu has never needed to grow past the one thing it does well: a soft custard pudding bun, made the way it always has been. It's a Japanese bakery, not a café — small, no seating to speak of, in and out.

The building and the recipe both look like they've been left alone on purpose. It's the kind of place that survives on repeat customers rather than foot traffic, tucked down a soi most visitors to the neighbourhood never turn into.

Go in the morning if you can — bakeries like this tend to sell out of their best trays first, and there's no reason to wait for the alternative.

A bakery that's been making one thing well for over fifty years, in an alley you'd never wander into by accident.
