Dar Roumana occupies a converted 17th-century palace in the Fes el-Bali medina, with a rooftop terrace lit by candles at dinner and views over the medina's rooftops toward the hills. The cooking is modern Moroccan rather than a straight traditional tasting menu — smaller, more composed plates than the usual riad set dinner.
It's set dinner-only most nights, booked in advance, which suits the format — a fixed menu built around what's good that day rather than an à la carte spread. Portions and pacing read more like a proper restaurant meal than a hotel dining room going through the motions.
Like everything in the medina, it's on foot only for the last stretch — arrange a guide or clear directions in advance rather than trusting a pin to get all the way there.
