Thomas Studd opened his own chop house on Cross Street in November 1867 after a falling-out with his brother Samuel, whose Sam's Chop House still trades a few streets away — the two are the same family tree, split down the middle. The current building, with its narrow, cast-iron-framed shape, dates to a 1901 rebuild and is one of the few Manchester pub interiors on CAMRA's national inventory of historic pub interiors.
Chop houses were built around quick, hearty lunches for the merchants and lawyers working nearby, and Mr Thomas's still runs on roughly that model — dark wood booths, engraved mirrors, a menu built around chops, pies and other things meant to be eaten well between meetings.
Go for lunch on a weekday if you want to see it working as intended; dinner is fine too, just a slightly quieter room.
