Nagataya, in Hiroshima's Naka Ward, cooks the city's own style of okonomiyaki — cabbage piled high, thin noodles, and a topping of oyster-based sauce, layered rather than mixed together the way Osaka does it.

It's cooked on a hot griddle at the counter and served straight off it, which is standard for the genre here but still worth watching if you haven't seen the layering technique before.

Go in expecting the Hiroshima style specifically — if you've only had Osaka's version, this is a genuinely different dish, not just a regional variation on the same one.
