Osteria del Sole has been pouring wine on the same spot since 1465, and it still runs on the original rule: no food sold here, no kitchen, bottles stacked to the rafters, and it's on you to bring your own dinner. People arrive with plates from the Quadrilatero market stalls a few steps away and eat standing at the communal tables.
It's less a restaurant than a five-century-old institution that happens to serve wine, and Bologna treats it that way — locals and regulars far outnumber tourists even with nearly 2,500 reviews.
Go with food already in hand, or grab something from the surrounding market first, and go for the history as much as the wine — this is Bologna's oldest osteria, not a themed recreation of one.
