Pa Lek Boat Noodle is a third-generation stall serving boat noodles — the small, intensely flavoured bowls originally sold from boats along Thailand's canals — beside one of Ayutthaya's old waterways. The broth is the draw: rich with pork and blood, built up over decades rather than a recipe someone wrote down recently.
Boat noodle bowls are meant to be small and eaten in multiples, and that's still how it works here — order a few rounds rather than one large bowl.
It's an easy stop alongside Ayutthaya's temple ruins, and a better sense of the old canal-side city than the ruins alone give you.
