Peumayén builds its menu around ingredients that mostly disappeared from Chilean restaurant kitchens — native potatoes, quinoa, merkén, mote, guanaco and Patagonian lamb — drawing on Mapuche and Andean cooking rather than a European-style tasting-menu format. It occupies a converted house in Providencia rather than a purpose-built dining room, which keeps the rooms small and the pacing closer to a dinner party than a standard restaurant service.
At 4.5 stars over nearly 1,900 reviews, it's well known within Santiago's own food scene rather than a true secret, but it's still not on the standard tourist circuit built around ceviche and pisco sours in Bellavista.
