Rastrello occupies a restored medieval palazzo in Panicale, a walled hill town in Umbria that sits above Lake Trasimeno and gets a fraction of the traffic nearby Tuscan hill towns do. The building keeps its old stone rather than smoothing it into something generic — the kind of restoration that works with what's there instead of over it.
The draw is the setting as much as the rooms: a small, quiet town off the main Umbrian circuit, with the lake visible from town and total calm once the day's few visitors leave.
