Husk

- Historic district, downtown Charleston
Why it’s in the log
For the Charleston episode of Parts Unknown (season 6, 2015), Anthony Bourdain said he wanted to "get it right" and handed the itinerary to Sean Brock — the chef behind Husk, McCrady's and Minero, and one of the people most responsible for the Southern-ingredient revival of the last two decades. The episode's centrepiece meal, oyster pie and shrimp and grits with Bourdain and actor Bill Murray, was filmed here.
Husk's menu changes with what the region's small farms actually have that week, built almost entirely around ingredients grown or raised within a few hundred miles — heirloom grains, heritage-breed pork, Low Country produce most restaurants treat as garnish rather than the main idea.
The building itself is a restored 1893 Victorian house; the dining room is upstairs, and reservations run out well ahead on weekends.
“Bourdain handed his whole Charleston itinerary to Sean Brock and let him drive — Husk is where that trust paid off.”
