Khao Soi Lung Prakit Kad Kom cooks its curry noodle soup over charcoal in the old Kad Kom market, and it's one of the shops people point to as the reason khao soi became Chiang Mai's signature dish in the first place. The bowl itself is the standard version done right: rich coconut curry broth, soft egg noodles underneath, crisp ones on top.
It's a proper noodle shop, not a restaurant — plastic stools, a few tables, in and out fast. The queue moves quickly even when it's long.
Go for lunch. Like most khao soi shops, it tends to sell out once the broth for the day runs low rather than staying open on autopilot into the evening.
