Khao Soi Mae Sai has been serving its version of curry noodle soup for decades and has the review count of a shop that's stayed a local institution rather than turned into a stop on a food tour. The broth is rich, the price is low, and the crowd at any given hour is mostly regulars.
It sits just north of the Old City moat in Chang Phueak, a short trip from the walled centre but a genuinely different, more residential part of town.
It's cheap enough and quick enough to make a habit of — worth going back to more than once on the same trip rather than treating it as a single stop.
