Why it’s in the log
French architect Jacques Avizou started buying up abandoned cave houses in Uçhisar in the 1990s and spent over twenty years restoring them — some cut straight into the rock, others built from the local stone alongside. What he ended up with isn't a hotel built to look old; it's the real houses, done properly: kitchens, fireplaces, and a clean, modern hand that never fights the cave.
The restaurant is the other reason to stay rather than pass through — proper cooking, not banquet-hall Cappadocia food, and reviews consistently single out the kitchen by name. Breakfast on the terrace looks out over Pigeon Valley and back at Uçhisar's castle, and it's one of the better views in a region full of them.
Nuri Bilge Ceylan shot Winter Sleep — the film that won the Palme d'Or in 2014 — here, and it shows: this is a place built for winter. Cold, quiet, fires lit, snow on the rock.
