Szimpla Kert opened in 2002 in a derelict Jewish Quarter factory and effectively invented the ruin bar as a category — mismatched furniture, bathtub seating, bicycles bolted to walls, a courtyard that keeps expanding into whatever room happens to be free that week. Every other bar on this list exists in a genre this one started.
Two decades of press coverage and a Sunday farmers' market have made it the least "hidden" entry here by a wide margin — 75,000-plus reviews is not a secret. It's included anyway, tagged honestly: this is the origin point, not an undiscovered find, and skipping it to chase something quieter means missing the room the rest of District VII is still answering.
Go on a weeknight if the tour-group crowd is the part you want to avoid — the building and the crowd both thin out considerably outside weekend peak hours.
